Ils contribuent \u00e0 fournir l\u2019\u00e9nergie dont le corps a besoin et \u00e0 assurer son bon fonctionnement, \u00e0 condition que la r\u00e9partition des macronutriments soit bien \u00e9quilibr\u00e9e. Puis il y a les prot\u00e9ines d&#8217;origine v\u00e9g\u00e9tale, avec les l\u00e9gumineuses (lentilles, pois-chiches, haricots rouges\/blancs, f\u00e8ves&#8230;.), les graines ol\u00e9agineuses (cacahu\u00e8tes, amandes&#8230;) et enfin tous les d\u00e9riv\u00e9s du soja (tofu, seitan et tampeh).\u00a0<\/p><p>D&#8217;un point de vue \u00e9nerg\u00e9tique,\u00a01 gramme de prot\u00e9ines apporte 4 kcal.\u00a0<\/p><p>\u00a0<\/p><p><strong>Les lipides :<\/strong>\u00a0Ils interviennent dans les d\u00e9fenses immunitaires, la synth\u00e8se d\u2019hormones ou encore le fonctionnement du cerveau. Ils sont donc indispensable au bon fonctionnement du corps humain, et ne sont pas \u00e0 diaboliser, bien au contraire.\u00a0<\/p><p>Une fois de plus, on retrouve 2 types de lipides, \u00e0 commencer par ceux d&#8217;origine v\u00e9g\u00e9tale, avec les huiles (dont les plus int\u00e9ressantes sont colza, olive, lin, tournesol puisqu&#8217;elles sont riches en acides gras insatur\u00e9s). Puis il y a les graines ol\u00e9agineuses (noix, noix de macadamia, noix de p\u00e9can, graines de s\u00e9same, amandes, graines de chia, noisettes, etc.)<\/p><p>Du faut de leur bonne composition \u00a0et de leur richesse en acides gras insatur\u00e9s et donc en om\u00e9ga 3, ces lipides l\u00e0 sont donc \u00e0 privil\u00e9gier.\u00a0<\/p><p>Concernant les lipides d&#8217;origine animale, ils comprennent l&#8217;ensemble des produits laitiers (fromage, beurre, cr\u00e8me fraiche) mais \u00e9galement les viandes (rouges notamment) ainsi que la charcuterie. Riches en acides gras satur\u00e9s, ils sont \u00e0 limiter davantage. Cependant, il existe quelques exceptions, avec les poissons gras tels que le saumon, les sardines ou encore le maquereau, qui contiennent de bonnes graisses et sont donc \u00e0 privil\u00e9gier
