Elles contiennent en moyenne une teneur en prot\u00e9ines avoisinant les 20% sous forme crue, chutant \u00e0 10% une fois cuite. Une assiette contenant environ 200g de l\u00e9gumineuses cuites repr\u00e9sente donc un apport en prot\u00e9ines int\u00e9ressant mais pas uniquement. Car ces f\u00e8ves et graines sont \u00e9galement riches en fibres utiles au bon fonctionnement du transit, \u00e0 la pr\u00e9vention de pathologies telles que le diab\u00e8te et poss\u00e8dent un fort pouvoir sati\u00e9tant.<\/p><p>\u00a0<\/p><p>Cependant, bien que les l\u00e9gumineuses soient des aliments riches en prot\u00e9ines, celles-ci ne sont pas de qualit\u00e9 \u00e9quivalente aux prot\u00e9ines d&#8217;origine animale. En effet, ces derni\u00e8res sont pauvres en certains acides amin\u00e9s soufr\u00e9s que l\u2019organisme ne sait pas produire de lui-m\u00eame 5.<\/p><p>\u00a0<\/p><p>\u00a0<\/p><h3><strong>Les c\u00e9r\u00e9ales<\/strong><\/h3><p>Les c\u00e9r\u00e9ales, et notamment compl\u00e8tes, sont une source de nutriments importante. Par exemple, 100g de flocons d&#8217;avoine repr\u00e9sentent un apport de 15 grammes de prot\u00e9ines, 55g de glucides et sont riche en fibres avec plus de 10% ! Les c\u00e9r\u00e9ales sont donc une excellente source d&#8217;\u00e9nergie et de micronutriments.<\/p><p>\u00a0<\/p><p>Mais tout comme les l\u00e9gumineuses et la quasi-totalit\u00e9 des prot\u00e9ines v\u00e9g\u00e9tales, elles pr\u00e9sentent un d\u00e9ficit en certains acides amin\u00e9s. Par chance, les acides amin\u00e9s manquants dans les c\u00e9r\u00e9ales sont pr\u00e9sents dans les l\u00e9gumineuses, et vice versa !
